happynewyearOn behalf of all of us here at Oliver Dental Implants, we would like to wish you and yours the very best for the New Year. May the sun shine on your face and the wind be at your back. May health and prosperity also be yours in 2014.

Many new year’s traditions involve food. One of my favorites is black-eyed peas. According to southern tradition, eating them on new year’s day brings good luck for the coming year. Below is a recipe I believe you will enjoy.

Yield: Makes 8 servings.

  • 4 strips bacon, diced
  • 1/2 cup chopped onion
  • 2 cups cooked black-eyed peas, or 2 packages (10 ounces each) frozen
  • 1/2 cup uncooked rice
  • 2 cups water
  • 1/4 teaspoon dried red-pepper flakes
  • 1/4 teaspoon salt
  • 1/8 teaspoon black pepper

Partially cook bacon in a Dutch oven, add onion, and cook until bacon is crisp and onion is soft. Add black-eyed peas, rice, water, and pepper flakes. Cover and simmer over low heat until rice is done, about 20 to 25 minutes. Toss with salt and pepper and serve immediately.
